Since posting a recipe for passionfruit butter yesterday, I realised a lot of people wanted to know why I called it butter and not curd. There are two reasons. The lemon curd and passionfruit curd concept is very new to me. I never grew up with it and did not experience it until a few years ago, well into my foodie shenanigans here in Australia. Curd in India was always a reference for yoghurt. My mind associates curd with yoghurt. Calling this beautiful tangy-sweet concoction "curd" just seemed wrong. So that was reason number one. Now picture this. Two little boys trying hard to evolve their tastes. They love butter and they love passionfruit. So Passionfruit Butter is exciting and tempting. Imagine their suspicious faces when I present it to them and call it Passionfruit Curd. Reason Number two.
But I promise I will try to call it curd. Passionfruit Curd. So with a big supply of passionfruit curd on hand, one of the easiest and quickest ways to use a lot of it up was to bake a cake. I used my favourite butter cake recipe and adapted it to get a delightful tea-time treat. Look at that beautiful canary yellow colour. Doesn't it make you happy?

Passionfruit Curd Cake
Ingredients
- 1 1/2 cups plain flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup raw sugar
- 125 g butter, melted
- 3 large eggs
- 2 tablespoons milk
- zest of 1 lemon
- 1 cup passionfruit curd
Instructions
- Preheat oven to 180°C. Grease and line an 8 inch round cake tin with baking paper.
- Combine flour, baking powder, salt and sugar in a large bowl. Mix to combine. Add eggs, milk, lemon zest and melted butter. Beat with an electric mixer for a couple of minutes until smooth and creamy. The cake batter at this stage will be quick dense and thick.
- Spoon into prepared cake tin. Top with passionfruit curd and gently using a spoon, swirl and mix the curd in the batter until just mixed.
- Bake in pre heated oven for approximately 50 minutes until golden and risen.
- Allow to cool and serve warm with a dusting of icing sugar or extra lashings of the passionfruit curd.
I used 'gluten-free flour' instead of regular flour and the cake was tasty and moist.
This recipe is so amazing, I've tried it twice now, once with lemon curd and once just the plain cake. Both times I made it in cupcake form. It is definitely a keeper.
Hi. I live in south Africa. Received a bottle of granadilla curd and was clueless as how to use it. Searching the web I saw your recipe and an now dying to try it with granadilla colours.
I made this cake yesterday. DELICIOUS! Love the texture. In my oven, it took 40 min instead of 50.

I am making passionfruit bars here in Costa Rica for a friend, and I was checking out the recipes and this beautiful cake popped up, I have to make this one for me.
I tried the recipe today and put lemon curd instead as that was what I had in the pantry. It's yummy! I haven't made a fluffy and unsunken cake for a while. It's definitely a keeper 🙂

Gosh I am a 65 year old Aussie and all my recipe books of Australian origin call it butter, I notice that British recipes call it curd. Your cake looks yummy.
Don't understand why people question calling it butter. Curd is an English thing. I am in my late 50s and have known it as butter all my life. So Sneh, feel free to call it butter any time you like.

I was born and brought up in India, too, and "curd" = yoghurt. Like Little Miss Muffet who sat on her tuffet, eating her CURDS and whey...
While I love the flavour of passionfruit, I'm not quite keen on the crunchy black pips.
There seems to be something very Australian about our passion for passionfruit. Just the smell of it evokes all the late summer days of childhood for me. My favourite soft drink when I was a child was the passionfruit flavored Passiona and I was amazed to discover the other day they still make it. So this cake looks particularly delicious for me.
You are so right about the word, "curd". It definitely reference differently in the West. This cake is divine and delicious!

My Grandma used to call lemon/passion fruit curd/butter - lemon/passion fruit cheese! I have no idea why..but that's what I grew up calling it . I have had to change it when I talk to people about it so I didn't bat an eyelash when I saw you had called it passion fruit butter. I need this cake in my life by the way - its a good thing I have a giant bowl of passion fruit sitting at home!
