A healthy Pina Colada Smoothie is a great post-walk or post-workout drink! It feels like you are having a dessert but with all the goodness of protein and fiber. Super easy to make whether you have fresh pineapples or not.
Creating That Coveted Pina Colada Taste In A Smoothie
I LOVE Pina Colada. I have a gorgeous Salted Caramel Pina Colada Cocktail recipe that I bust out on special occasions. In fact, I love that pineapple-coconut flavour combination so much that I baked it into a Pina Colada Loaf. But today, I want to share one of my favourite smoothie recipes - Pina Colada Smoothie.
A true connoisseur of Pina Colada knows that it should only have two flavours - pineapple and coconut. Smoothies that have bananas and/or mangoes definitely don't qualify to be called Pina Colada Smoothies. It is not just about the name. Bananas and mangoes have a very overpowering taste that threatens to take over all other flavours. For my Pina Colada Smoothie, I use a big, ripe, fresh pineapple and a cup of light coconut milk (to keep it lighter, of course!). I then build around it using complimenting flavours that don't deter from the main event.
My smoothie has lime. It is a game-changer in this smoothie. Lime does great things to the Pina Colada combination. The protein powder (I use Bare Blends Bare Protein Isolate - it is unflavoured, high in protein, gentle on the tummy and just plain delicious) helps thicken the smoothie up. Ingredients
- 1 whole ripe pineapple
- 2 limes, peeled
- 1 cup light coconut milk
- 1 cup almond milk
- 1 tablespoon maple syrup
- 30 g Vanilla Protein Powder*
Instructions
- Prepare the pineapple by trimming the ends and peeling it. Cut into quarters lengthwise. Trim the inner core on each slice and chop slices into pieces.
- Add pineapple, limes, coconut milk, almond milk, maple syrup and protein powder to the jug of a blender. Process for 1-2 minutes until smooth.
- Fill 2-3, 325ml capacity lidded glass jars and store in the fridge for up to 3 days.
The whole family loved this smoothie! I only had half a lime, so supplemented with mandarin and it was sooo good. Also added 1/3 cup of oats per person instead of protein powder. Going on high rotation!
