A Sparkling Chia Refresher is a great way to get your daily dose of chia seeds if you have had enough of chia puddings and smoothies. It is definitely lighter, cleaner and more refined on the palate. In fact, this sparkling chia drink is an excellent palette cleanser after a meal.
This recipe is inspired by the Mexican Agua Frescas which are basically non-alcoholic drinks made by combining fruit, flowers, herbs and or seeds in a refreshing sweet drink. My sparkling chia refresher is an easy drink to make. Besides being a total nutrition powerhouse with essential omega 3 fatty acids, protein and antioxidants, this weight and blood sugar regulating drink is absolutely delicious.
Packed with tangy limes and delicate anise flavours, all you have to do is mix the concentrate and chill in the fridge. Then when you are ready to have an amazingly refreshing drink, just top up the concentrate with fresh sparkling water made in the Sodastream Sparkling Water Maker and serve with a lime slice. Perfection!

Ingredients
- 300 ml water
- 1 ½ tablespoons chia seeds
- 3 tablespoons maple syrup
- 2 star anise pods
- Juice of 2 limes
- 300 ml sparkling water
- lime wedges, to serve
Instructions
- Place water, chia seeds maple syrup, star anise and lime juice in a 500ml capacity mason jar. Mix well. Allow to rest in the fridge for 4-5 hours or overnight.
- When ready to serve, pour chia mixture in 2 X 350ml capacity tall tumblers. Add ice to each glass. Top with sparkling water and garnish with lime wedge.
