Ingredients
1pearquartered and deseeded
1large purple cabbage leafchopped
1cucumberchopped
1large iceberg lettuce leaf
3sprigs of parsley
juice of 1/2 a lemon
1cup(250ml)chilled coconut water
Instructions
Place all ingredients in the jug of a blender.
Process until smooth. Pour in a tall glass and enjoy immediately.
Smoothie will keep in a glass jar in the fridge for up to 2 days.
Notes
If you don't have pear on hand, a Granny smith or red apple will work too.
Make sure you wash the lettuce and cabbage leaves to remove all dirt.
The smoothie will separate after a few minutes. This is because of the high water content. Just give it a quick stir to make it creamy again.
